Another handy tip: Once the water's boiling, stir it up into a whirlpool before you pour all your potstickers in. That way, the first few won't stick to the bottom of the pot by the time you get the last few in. From that point on, the water will never return to a full boil, even with the stove on 'HI'. That's fine. Potstickers are fragile things, especially if they've been on the frozen rack of a supermarket for a month or two. Gently stir the pot with one of your wooden spoons, to keep them from attaching to the hot surfaces, and let the heat go to work.
