That large cutting board comes in handy again. Dump the potstickers out on the board, trying to spread them as wide as possible. Many a potsticker has been ruined in a colander by sitting too long, and fusing with its neighbor. This method avoids that, and you can take your time frying them up. It's also better than leaving the potstickers immersed - they would either overcook, or stay too waterlogged and make a huge mess when you fry them.
