Anyway, this tutorial is all about how to cook potstickers and get them as crunchy, oily, and salty as possible all at once. You'll need the following equipment: A clean flat surface like a cutting board, a pot like the one in this picture, two wooden spoons, a good-sized container with a lid, a long-sleeved sweater, and at least one frying pan. You'll also need copious amounts of oil and salt, of course. The first step is to pour a whole bunch of water into the pot and start it on the way to boiling. I find that water boils faster with a lid on, but opinions vary.
